This is a must-try recipe! You will be amazed at the creamy texture and rich chocolate flavor of this yummy pudding. The secret ingredient: avocado! Cleverly combined with cocoa powder, honey, and a few other ingredients, the avocado in this recipe proves healthy eating doesn't mean eliminating dessert. Garnished with toasted coconut makes it over-the-top delicious!
2 Avocado (medium-large, pitted and peeled)
1/2 c unsweetened cocoa powder
6 T Honey
1/4 c skim milk
1 t instant coffee or espresso powder
1 t vanilla extract
Using a food processor fitted with a metal blade, blend avocados, cocoa powder, honey, milk, instant coffee (or espresso powder), and vanilla until completely smooth, then chill, covered in the refrigerator at least 30 minutes. Transfer to 3 or 4 bowls and garnish with toasted coconut.
